My hubby and I had this last night for dinner – sorry no photos, it didn’t last long enough….
Basically, you cut a butternut squash in half and roast it cut side down for 45 minutes in 1″ of water, then turn it over, season it and roast for another 15 minutes. Check that the squash is cooked, then spoon on hot bolognaise- veg or meat – and back in the oven for 10 minutes. Top with your choice of cheese, back in the oven for a few minutes more to melt and then eat.
Hubby’s plateful didn’t last long! You could also make ribbons out of the squash and blanche them, then saute in olive oil/butter and garlic. Then top with hot bolognaise. This would be quicker, but more hands-on.
