Creamy Spinach Recipe…

Here’s another recipe we made last night. Again, it was scoffed so fast there is no pictoral evidence of the dish! Have to try harder to get some photos….

Creamy Spinach

400g frozen chopped spinach, defrosted and squeezed
1 small onion, sliced
1 small courgette, sliced
1 small red pepper, sliced
100g mushrooms, sliced
1 clove garlic, crushed
200ml single cream
1 tbsp freshly chopped parsley
squeeze lemon juice
1 tbsp grated parmesan
1 tbsp veg oil

Heat up the veg oil in a pan, then add the onions, mushrooms and garlic. Saute until half-cooked then add the courgette and peppers. Cook until beginning to brown, then add the spinach and heat through. Add the cream, lemon juice, parsley, and salt and pepper, parmesan and let simmer for a few minutes to thicken up the cream a bit.

That’s it. It served 3 greedy people. Probably should serve 4.
