Summer Fruit Cordial

We have lots of soft fruits on our allotment. Red and green gooseberries, raspberries, redcurrants and blackcurrants all end up in my freezer and jam pot along with rhubarb and a ton of veg. Weather plays a huge part in the size of our crops – so for the last few years we’ve not had a great deal.

I’ve just used up the last of our frozen soft fruits making this cordial for my son, who calls it ‘red juice’ and loves it. It’s a bit tangy depending on the ratio of fruits. You can use the fruit from frozen, just have the pot on low until it has mostly defrosted.

Summer Fruit Cordial

4 lb mixed soft fruits – redcurrants, blackcurrants, gooseberries, raspberries, cherries, plums
2 cups sugar
3″ piece of cinnamon
3 sprigs of mint
2″ piece of ginger, sliced
2 cups water

Bring all the ingredients to a simmer and cook for 10-15 minutes until the fruit is cooked. Strain through a muslin cloth to get as much juice as possible. Take your time, let the juice drain out by itself or it could get cloudy.

Return the juice to a pot and bring to a boil. Reduce for 15 minutes, cool and bottle. Will keep for up to 3 months in the fridge. Serve with soda water, plain water, or add to your favourite tipple….
