Thought you all might like something fast, non-christmasy and fun to make with kids….
We go through a lot of bananas, but sometimes a few end up in the freezer – when they are too brusied or too ripe to eat as is.
Sometimes I chop them up and use them for smoothies, other times I chuck them in the freezer whole and make banana muffins. These are our favourite. My son usually mashes up the bananas with a potato masher.
Chocolate Banana Muffins
3 ripe bananas, defrosted and mashed (2 if large)
1 tsp vanilla
125g white flour
125g wholewheat flour
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp cloves
4 tbsp cocoa powder
100g raisins or sultanas, or finely chopped dried apricots (optional)
100g chopped dark chocolate (or chips/drops)
50g Chopped walnuts or other nut (optional)
2 tsp baking powder
Mix the first 5 ingredients together in 1 bowl, then mix the rest in another larger bowl. Pour bowl 1 into bowl 2 – stir only until just mixed together. Spoon into greased or lined muffin pans and bake at 165’C for 15-20 minutes. This will make 18 – 20 small muffins. They won’t last long!
I often leave out/add in the optional ingredients – dried apricots instead of raisins, hazelnuts/almonds or mixed nuts instead of walnuts. Mini-marshmallows may have fallen into the bowl once or twice as well….. 😉
