Most people think Welsh Rarebit is cheese on toast, but it’s a whole lot more than that. It’s a thick cheese sauce made with egg, beer, mustard, worchestershire sauce, flour, and cheese spread on toast then grilled to cook the egg and glaze the hot sauce.
This is my version – it’s not cooked before spreading on the toast and there’s no beer or flour in it.
Faux Welsh Rarebit
200g grated strong chedar cheese
1 tbsp whole-grain mustard
dash worchestershire sauce
salt & pepper to taste
4 slices lightly toasted bread
Put your grill on to 250’C to warm up.
Place your toast on your pan. Mix all the rest of the ingredients together – it should be thick and sticky. Spread evenly on the toast right to the edges so it doesn’t burn. Place the pan under the grill on the 2nd space down so it isnt’ too close to the burner and let grill until the cheese is melted and bubbling and evenly browned on top. Keep an eye on it – it will burn! Serves 2 for lunch or 4 for a starter.
